Zuppa Toscana Soup

Have you ever had this soup from Olive Garden? Delicious. This homemade version is just as tasty.

Ingredients:

1 lb. italian sausage {spicy if you like it with a little kick} - crumbled
1/2 lb. smoked bacon - chopped {optional, i never add this...}
1 qt. water
2 14.5 oz. cans {about 3 2/3 cups} chicken broth
2 large russet potatoes - scrubbed clean and cubed {I love lots of potatoes so I always add extra}
2 garlic cloves - peeled and crushed
1 medium onion - peeled and chopped
2 cups chopped kale OR swiss chard {you can also use spinach, tastes the same}
1 cup heavy cream
salt and pepper to taste

Directions:

In a skillet over medium-high heat, brown sausage, breaking into small pieces as you fry it; drain and set aside. In a skillet over medium-high heat brown bacon; drain and set aside. Place water, broth, potatoes, garlic, and onion in pot; simmer over medium heat until potatoes are tender. Add sausage and bacon to pot; simmer for 10 minutes. Add kale and cream to pot; season with salt and pepper; heat through.
