1/2 cup onion, minced
2 tablespoon butter
1 tablespoon flour
3 cups chicken broth
1 (15 ounce) can pumpkin
2 tablespoons brown sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup whole milk
1. Saute onion in butter until tender. Add flour and stir.
2. Slowly add broth. With whisk stir in pumpkin, brown sugar, salt and pepper until smooth.
3. Heat to boiling. Reduce heat and simmer 5 minutes.
4. Stir in milk and cook until heated through.
5. Serve with roasted pumpkin seeds.
